The Louisiana Nursing Home Association (LNHA) invites long-term care professionals interested in becoming certified as dietary and food service managers to attend this four-day workshop on February 16-19, 2026, at the Paragon Casino Resort in Marksville, LA. This structured course equips participants with knowledge and hands-on experience needed to excel in dietary management within long-term care settings.


Prerequisite: Participants must hold a current ServSafe Food Protection Manager certification before attending. The ServSafe Manager course is available online through the ServSafe National Restaurant Association and certification must be active prior to the LNHA Course.


This comprehensive workshop provides training in all aspects of food operations, including purchasing, preparation, menu management, and nutrition principles. Participants will also complete assigned clinical practicums, designed to ensure competency in documenting nutrition information, maintaining food safety and managing work teams. All clinical components are taught by a registered, licensed dietitian, nutritionist. The course instructors are Leigh Anne Burns, RDN, LDN, Jeff DeMars, LNFA, CDFSM, CSW-AC. The deadline to register online is February 10.


After completing the course, participants will be able to:

  • Utilize the systems approach to procure, produce and serve food to all residents
  • Provide a safe and sanitary environment for all employees and residents
  • Exercise fiscal accountability in purchasing
  • Utilize human resource management techniques
  • Provide appropriate quality nutritional care for the residents
  • Meet all state and federal licensing and regulatory agency standards
  • Constantly strive for a person-centered care approach
  • Apply for professional certification as a Certified Dietary and Food Service Manager with the Louisiana Certification Registry for Healthcare Ancillary Professionals

Certification Information
This continuing education activity has been submitted and approved for 45 Contact Hours by the Louisiana Certification Registry for Healthcare Ancillary Professionals, Inc. for Certified Dietary and Food Service Managers. Upon successful completion of the course, each participant will be qualified to become a Director of Food & Nutrition Services by standards and regulations enforced by the Louisiana Department of Health, Health Standards Section, and Title 42, Code of Federal Regulations; Part 483; Requirements for States and Long-Term Care Facilities.

LNHA reserves the right to cancel or modify the event due to unforeseen circumstances beyond the control of LNHA, including but not limited to, adverse weather conditions, civil disorder, government regulation or public health emergency. In such case, LNHA would issue a refund of the registration cost. A refund will not be issued for other expenses incurred, such as travel or lodging and LNHA will not be held liable.
